Meet the Chef

Who am I? My name is Paul Baldry (Long John) I am a Chef and Published Poet, having served in the Army for 25 years, 12 years with 29 Commando Regiment Royal Artillery. In my latter years I serve in the Army Catering Corps, which became part of the formation of the Royal Logistic Corps (RLC), where I achieved the accolade of Master Chef a title I am very proud of. 

I cooked for members of our Royal Family on many occasions, I catered for Senior Officers of all 3 services of our Armed Forces and Visiting Members of State.

I enjoy all types of cookery and the culinary arts from field cooking on a campfire or providing Grand Gala Buffet and Dinner. If you want to learn to peel and dice an onion correctly or how to produce that next diner party look no further, I am here to help.

My courses cater to all levels from beginner who as never peeled a potato, the home chef, or those small hospitality venues, including Company Boardroom dinners and buffets and Schools, who require new skills to build on their recipe repertoire to attract a wider customer base or to impress valued guests and customers.

I provide short cookery courses designed to be delivered in your home or workplace. My courses range from one day cooking courses and evening classes for beginners or enthusiastic foodies looking for help in producing that next dinner menu. I also offer bespoke workshops on specific classical culinary techniques and cuisines.

All my courses come with Food Hygiene and Allergy Awareness training. I also offer Certified Level 2 & 3 Food Safety Courses.

The Home of Cooking Cookery School

Home Tuition

One to one 6 hours of home tuition designed for those who are looking for beginners course and those looking to develop new skills, or learn how to make your favourite dish into a classical piece of Art. 

£120 per day

Workplace Tuition & Support               

To provide support for your apprentice who may be studying NVQs and require technical tuition, or supporting a working kitchen, teaching new culinary skills from stove to service. Providing advice on menu compilation with a focus on fresh nutritional diets. Or practical guidance on food safety, HACCP and day to day general safety and hygiene audit and record keeping. 

£35 per hour

Food Safety & Hygiene Safety Training 

The qualification is a level 2 aimed at learners working in the catering industry and other food handlers. It can also be used as an introduction for a learner wishing to gain higher levels of training in this area. The learner will gain knowledge and understanding of the key issues in food safety required to safeguard the health of consumers. The areas covered are considered vital by the Food Standards Agency to maintain food safety and hygiene.

  1. This training can be delivered at your own venue. Or a suitable offsite venue of your choosing.  
  2. I can arrange offsite venues on your behalf this may incur additional cost. 
  3. Minimum delegates per course x 4 Maximum delegates x 8

Good Nutrition Level 2

The qualification is designed for anyone involved in food preparation and planning. Learners will gain knowledge of nutrition and an understanding of special dietary requirements. The knowledge gained will assist with the planning of well-balanced nutritional meals and special diets having a positive impact on health and well-being.

This qualification has a recommended guided learning hours of 5 hours total qualification time.  

Certification 

The qualification does not have an expiry date but refresher training and keeping up to date with changes to policies, procedures and new
